As Thanksgiving approaches, you may be thinking of your menu with disdain for the dreaded all-day turkey cook-off. If you want to mix it up this year, add some island flavor and prepare a Hatteras-style feast instead. The main course? Boiled drum. Quick, easy and delicious, this is one dish that is guaranteed to be a crowd pleaser! This recipe is that of island native, Mrs. Zenovah Hooper of Salvo, who just passed at the age of 100 years old. Life we said before, islander’s know food, and after 100 years of trying, we’re thinking this recipe is probably fail-proof!
Zenovah Hooper’s Boiled Drum
Ingredients:
Red Drum
6-8 small potatoes equal to the amount of fish you have
1-2 onions, diced
Salt and Pepper to taste
Bacon Grease
Directions:
1. Cut the fish and potatoes into chunks and place in a large pot.
2. Cover with water.
3. Add salt and pepper
4. Cover and boil for one hour
How to Serve:
Add fish and potatoes to platter. Sprinkle with diced onions and cover in bacon grease.
